Cooking Fun in the Caribbean and Naturally Delicious!

Laura and Chris both love to cook and provisioning is always lots of fun in the Caribbean when you start out with plenty of fresh tropical fruits and vegetables. Most of the menu is based on what is available locally and is naturally delicious.

An example of what breakfast might bring would be Belizean shrimp quiche with a tomato and cilantro salsa or rum and coconut French toast always accompanied by gourmet fresh ground coffee and fresh papaya or pineapple and bananas and sometimes a fruit no one has seen before? Lunches may include Thai Beef salad with Angostura bitters or cheese burgers in paradise or maybe a yummie curry chicken wrap and plenty of salad.

It is a tradition to have sundowners and Hors d'oeurves on the back deck at 5:00. Sometimes that means zesty green mango and cucumber chow, shrimp ceviche, or crostini with spicy cheese salsa but it always includes rum punch! Dinner is a delight under the stars, whether it is Cuckoo Coco Chicken with mango salsa and cho cho/melon salad and Banana Flambe for dessert, Pork Tenderloin with Chris' mouth watering brandy sauce and Caribbean capponato veggies, or maybe succulent Belizean Shrimp Kabobs with a curry ginger sauce and traditional coconut rice served beside a crunchy green salad.

We always try to include as much seafood as possible according to what is in season. We can also modify our menu according to individual tastes or allergies.
